Asparagus salad
Power bars with lots of minerals
Ingredients for 4 people:
250 g green asparagus /// 250 g white asparagus, cooked /// 4 cherry tomatoes /// 1 handful dandelion salad
6 quail eggs or 2 chicken eggs /// 4 tbsp olive oil /// 2 tbsp white wine vinegar
1 tsp lemon juice /// ground pepper /// salt
• Cut away the dried ends from the green asparagus, peel the spears and cook them in boiling salted water for about 7 minutes, then cool them immediately in cold water.
• Cut the green asparagus with the cooked white asparagus into 1 cm pieces, provide the asparagus tips as garnish.
• Now marinate the asparagus pieces with the olive oil, white wine vinegar, lemon juice, salt and pepper.
• Arrange in deep plates together with the halved soft-boiled quail or chicken eggs, the halved cherry tomatoes and the dandelion salad. \\\
