Aubergine Tartare
Very healthy with few calories
Ingredients for 2 persons:
1 aubergine /// 1 small red onion /// 2 small pickles /// 1 tsp capers /// 1 tbsp olive oil /// 1 tbsp linseed oil
1 tbsp tomato puree /// 5 tsp mustard /// 1 tsp paprika powder /// 1 tbsp apple puree
To taste:
a little soy sauce
a little lemon juice
salt and coloured pepper
• Halve the aubergine lengthways and cut into a grid. Brush with oil and bake in the oven at about 200°C for 30 minutes..
• In the meantime, finely dice the onion and pickled gherkins, as well as the capers.
• Mix the tomato paste, mustard, applesauce, oils, soy sauce and lemon juice well.
• Remove the aubergine from the oven, scrape out the soft flesh with a spoon and leave to cool. Chop finely and mix well with the remaining ingredients.
• Season with a little salt and pepper and serve with lightly browned toast. \\\
