Chickpea burger with mint yoghurt sauce

Ingredients for 4 burgers:

80 gr chickpeas (cooked) /// 1 carrot roughly grated /// 1/4 yellow pepper /// 2 spring onions cut into rings.
1/2 tsp cumin /// 1 tbsp parsley finely chopped /// 1 tbsp coriander /// 2 egg yolks /// 2 tbsp breadcrumbs /// 2 tbsp oat flakes
4 wholemeal rolls /// lettuce leaves /// 1 tomato /// 1 onion

Mint yoghurt sauce:

250 gr yoghurt /// 2 tbsp lemon juice /// olive oil /// 2 tbsp mint, salt and pepper.

• Coarsely mash the chickpeas. Mix in carrot, pepper and onion, add spices and season with salt and pepper.
• Add the egg yolk, breadcrumbs and oat flakes and mix to a firm mixture. Shape the burgers and fry in a pan with oil over medium heat for about five minutes until golden brown on both sides.
• Mix all the ingredients for the sauce. Halve the buns, toast lightly and spread with the sauce. Arrange the burgers with lettuce leaves, tomato slices and onion rings.
• Serve with baked potatoes. \\\
