Nettle dumplings
Healthy from the garden
Ingredients for 4 people:
½ onion /// 200 gr tips of young nettles /// 250 gr dumpling bread /// 50 ml milk /// 3 eggs /// 1 tbsp flour /// mountain cheese, grated /// butter.
• Sauté the finely chopped onion in butter. Then add the washed and chopped nettle.
• Milk, eggs, flour with salt & pepper and mix well. Pour the mixture over the dumpling bread.
• Fold in the onion and nettles and leave to stand for about 30 minutes.
• Form dumplings from the mixture and place in boiling salted water. Leave to stand for about 15 minutes.
• Sprinkle the plate with grated mountain cheese and arrange the dumplings on it, drained directly from the pot.
• Top with brown butter if desired. \\\
