Polenta-Gnocchi

A savoury temptation

Ingredients for 4 persons:

100 gr pancetta /// 1 1/4 litres water /// 2 tsp salt /// 350 gr polenta
180 gr Gorgonzola piquant /// 50 gr Parmesan /// 150 ml cream /// 50 gr melted butter
butter for the mould, basil leaves

• Cut the pancetta into small cubes, fry and drain on kitchen paper.
• For the polenta, boil water with salt, slowly stir in polenta. Continue stirring for a good 20 minutes until the polenta separates from the edge of the pot. Mix the bacon cubes into the polenta mixture
and let and leave to cool a little.
• Using a wet tablespoon, scoop out small portions and shape into gnocchi in your hand. Then place them in a buttered dish, overlapping slightly.
• Cut the Gorgonzola into cubes and spread over the gnocchi, sprinkle with Permesan and pour over the cream.
• Preheat the oven to approx. 220°C and then bake the gnocchi on the middle shelf for 25 minutes. Keep drizzling with the melted butter.
• Cut the basil leaves into strips and sprinkle over the gnocchi before serving. \\\
