Orange salad with Feta cheese

A low-carb recipe with lots of vital nutrients and filling fibre.

Ingredients for 4 portions:

1 red onion /// 3-4 tbsp olive oil /// 1 small head of radicchio /// 2 large oranges /// 100 g feta cheese /// 2 tbsp mild, green, pitted olives, preferably stuffed with almonds /// salt, pepper /// chilli powder


• Peel the onion and slice into fine rings. Place in a small pan with 1 tbsp of oil, season lightly with salt and fry for approx. 5 mins. over a low heat until soft but not browned. Remove and leave to cool on a plate.
• Clean the radicchio and remove the stalk. Wash the lettuce, spin dry and tear into bite-sized pieces.
• Cut a thick layer of peel off the oranges so that the white skin is also removed. Then cut the oranges crosswise into thin slices and arrange on the salad.
• Drain the sheep's cheese and crumble onto the oranges, add the olives and onion and drizzle over the rest of the oil.
• Sprinkle a generous pinch of chilli powder or pepper over the salad. \\\
